With cheesy potato fish pie for baby
These mini fish pies are a favourite with my girls and hubby alike. Young babies just love the creamy cheesy potato and from 8 months +, you can add broccoli, which is packed full of the goodness your little ones really need in their daily diet. As advised by Judith Calvin, our consultant paediatric nutritionist:
“Broccoli is a superfood. It is packed full of vitamins and minerals that babies need daily for optimal growth and development, including vitamins A, C, K, B6 and folate and every other mineral for that matter! “
Prep Time: 15 Mins | Cook Time 35 Minutes
Serves 6
Ingredients
800g White and sweet potato peeled and sliced into quarters
500g Basa fillets
250g Broccoli
55g Unsalted butter
1 tbsp Whole milk
125g Cheddar cheese (50g for the potato, 50g for the cheese sauce & 25g for the top of the pies)
1 Flat tbsp flour
500ml Whole milk room temperature
A pinch of nutmeg
(For adaptations to the recipe see ‘Notes’ below)
Method
Preheat the oven to 190C fan/210C/375F/Gas Mark 5.
Set a pan of water to boil and cook the potatoes until nice and soft, which usually takes around 12-15 minutes.
Whilst these cook, set another pan of water to boil, and once boiling, place the fish in a flat bottom sieve over the pan and steam for 4-5 minutes or until cooked through.
Once the fish is cooked, remove it from the sieve and set it aside. Then, steam the broccoli until tender, which will usually only take a few minutes.
Once the potatoes are cooked, drain, and return to the pan, then add 20g of the butter and the milk, and then mash. Once creamy add 50g of the cheese and fold into the potato, cover and set aside.
Now for the cheese sauce. Melt 50g butter on medium heat, remove from the hob and stir in the four to make a roux. Return to the hob and gradually add the milk, stirring constantly with a balloon whisk until it thickens. Add the nutmeg (if you want to omit this for the baby’s portion, you can, but introducing bold flavours from a young age helps contribute to a more adventurous palette as they get older). Remove from the heat and add 50g of the cheese.
7. Divide the fish between 6 ramekins, and then the broccoli between 5 of them (leaving one without for baby).
8. Pour over the cheese sauce, then layer the mashed potato over the top. Remember which one is for the baby!
9. Sprinkle with the remaining cheese and place in the oven for 20 minutes, checking to ensure they aren’t catching
across the tops.
10. Remove from the oven and spoon the baby's portion into the blender jug, add 25ml sterilised water and blend on
high for a few seconds. If it’s still too thick, add another 25ml water and re-blend, continue in this method until
the right consistency is achieved for your baby.
11. Serve the pies to children aged 8 months + (see notes below), along with adults alike offering additional seasoning if required.
Please ensure to spoon the pies into another cooler dish prior to serving to all ages of children.
Notes
8 Months +
Baby can eat the entire meal as it is by the age of 8 months +, just ensure to remove the dish from the ramekin, chop or blend (adding touch water if it's too thick for your baby) and allow it to cool.
NUTRITIONAL NOTES
By Judith Calvin from www.healthisgoodfood.com
This is a great weaning recipe that is full of flavour without the salt and a nice soft texture for the solids journey. This is an all-rounder in terms of nutritional value. Containing carbohydrates for energy, protein from the fish for building and repairing muscles and calcium for bones and teeth from cheese and milk. If you have already introduced dairy into your baby's diet then this would be a great dish to try out fish for the first time.
The broccoli adds a little fibre, important for your baby's digestive system. Its main power however is that it has an excellent source of vitamin C which protects our cells from damage and builds our immune system, folate (a B vitamin) important for red blood cell formation and for growth and development and vitamin K which makes proteins for blood clotting.
